Banana Pancakes
Only three ingredients to create a high protein, low calorie nutritional breakfast. This is definitely a healthy breakfast that is low calorie, high protein, quick and easy, budget friendly.
Recipe:
*One medium banana
*Two large eggs or four tsp egg whites
* One tablespoon extra virgin olive oil
Batch makes two servings.
Pre heat nonstick frying pan and oil on medium heat.
Mix banana and eggs in a blender until mixture is smooth and creamy.
Pour approximately 3-in size pancakes into preheated pan. Cook on medium low heat until bubbly and lightly browned on ends flip, slightly brown other side only about a minute or so. Repeat until mixture is gone should make about 6 pancakes three per serving. Texture will be more like a crepe.
With the texture of a crepe these pancakes pair very well with fruit and nonfat vanilla yogurt.
Note: if you want more of a pancake texture add two tablespoons of pancake mix or all purpose flour.
