Dehydrated Sweet Potato Chips

Homemade sweet potato chips, no additives and no preservatives. Plain simple goodness. Rich in vitamins, mineral, antioxidants and fiber. This sweet root is definitely a super food with all its vitamins minerals and health benefits. These decisions sweet potato chips are gluten free,vegan and whole 30 approved. What better to snack on? Sweet and spicy chips. 
Only a handful of ingredients and you can make this healthy snack  in the oven or a dehydrator. I have seen several recipes where they where  making these sweet potato chips in an air fryer, I personally have never tried it, but they look delicious also. In this recipe we will be using dehydrator.
This recipe makes approximately four servings. At under 100 calories per serving.

Ingredients:
2 medium sweet potatoes
2 Tablespoon of extra virgin olive oil or avocado oil.
I tablespoon of sea or Himalayan pink salt.
1 tablespoon chili powder

Equipment:
 
Vegetable peeler 
A mandolin or sharp kitchen knife 
Large mixing bowl
Colander
Food dehydrator

Cooking instructions:
Add 2 cups of cold water in the mixing bowl, and set aside.  Wash and peel your two medium sweet potatoes with your vegetable peeler making sure to remove all the outer skin.
If you're using a mandolin to slice your sweet potatoes place your settings at 1/8 of an inch thick and angle them when slicing to get as large of a slice as possible. Keep in mind they will significantly shrink as they cook. Or choose a sharp kitchen knife that can cut your sweet potatoes very thin.  Please Use caution when using Sharp Cuttery in the kitchen and if you're using a mandolin please keep in mind to use the holder provided.

Place your sweet potato slices in the cold water as your slicing them. Once your done slicing your sweet potatoes let them set the cold water for about 5 to 10 minutes. This helps remove the excess starch and to help the potatoes cook more evenly. Drain your sliced sweet potatoes in a colander removing all the excess water. 


Rinse and dry out your mixing bowl and add the potato slices back in. Pour in your olive oil and seasonings and mix gently to cover all the potatoes.
Place your potatoes on the dehydrator racks paying close attention not to overlap them. If your dehydrator has a temperature setting set it to  about 115° f and cook for 8 to 12 hours.
Store your sweet potato chips and an airtight container. They will a last approximately 2 to 3 months.
