Chicken and White Bean Soup
CHICKEN AND WHITE BEAN SOUP

The aroma of this warm cozy soup simmering through the  house will comfort and warm you all by itself. Naturally healthy and low calorie meal full of delicious flavors and textures. Quick and easy, throw it all in one pot type thing. What could be better?

Ingredients:
*3 skinless bone-in chicken breast, ( for bone broth ) or 3 cups of diced white chicken meat.
*One teaspoon of olive oil.
*Three medium carrots peeled and sliced.
*Three celery stalks, sliced.
*6 cups of chicken or vegetable broth.
*Two cups of water.
*2 (15 oz ) cans of Great Northern beans,or cannelloni beans, rinsed and drained.
*1/4 tsp of red pepper flakes.
*3 garlic cloves minced.
*Salt and pepper to taste.

Cooking instructions:

Step one: Heat oil in a stock pot over medium heat. Saute the garlic and onions for about 30 seconds to a minute . ( Till the onions look translucent)
Step two: Add in the chicken or vegetable stock, place in bone in chicken breast. Let chicken breast simmer on medium high heat for about 1 1/2 to 2 hours. Remove chicken breast, and set aside until cool. While cooling, place in carrots, celery and water simmer on medium. Once chicken breast have cooled to touch remove bone and dice the breast and place back in the broth. Add the seasonings, salt and pepper to taste. Cook until vegetables are tender.
