HEARTY MINESTRONE TURKEY SOUP

Healthy and Hearty Minestrone Turkey Soup 

This warm and soothing Hardy Minestrone turkey soup is good for the soul. It's a one-pot wonder for when you're feeling a bit under the weather. This turkey minestrone soup it's also budget-friendly, low calorie, (approximately 120 calories per serving) gluten-free, and can be made with or without the turkey.

Ingredients:

*1 lb ground turkey breast or two cups cooked chopped leftover turkey.

* 1 medium onion chopped.

* 3 cloves of minced garlic. 

* 2 celery stalks chopped. 

* 2 medium carrots chopped.

* 6 cups of reduced sodium vegetable or chicken broth.

* 2 cups of tomato V8 juice. 

* 1 can of diced tomatoes. 

* 2 cups of fresh chopped spinach or one 10 oz pack of chopped frozen spinach.

* 1 can of white beans (cannelloni ) rinsed and drained or you can substitute with chickpeas.

* 1/2 teaspoon of garlic powder.

* 1/2 teaspoon of ginger root powder or minced ginger root.

* 1 teaspoon dry basil.

* 1 teaspoon dried oregano.

*  1/2 cup of small pasta (uncooked) of your choice.

* 1 bay leaf. Remove before serving.

* Salt and pepper to preferred taste.

Recipe makes about 6 to 8 servings.

Cooking instructions:

In a stock pot over medium-high heat sauteed the turkeys onion and garlic until the turkey is cooked thoroughly. Drain excess fat place back into pot.

If using chopped left over cooked turkey. Saute onions and garlic until opaque about 1 to 2 minutes. Add broth , V8 juice and add the turkey that you're using. Add chopped carrots, celery and spices and let simmer until tender, about 20 minute, stirring as needed. 

Add the pasta, Frozen or fresh spinach, and add chickpeas or cannelloni beans and cook for 10 more minutes or until pasta is tender stirring occasionally. You can add another cup of water or broth if needed.

This recipe makes a about 6 to 8 servings. It can be topped with fresh ground Parmesan cheese or even seasoned croutons.

Approximate nutrients per serving. 120 calories, 1 g of fat, 13 g of protein.
