SHEET PAN BREAKFAST

Spicy Sausage Egg and Spinach Sheet Pan Breakfast.

This quick and easy sheet pan breakfast meal is packed with amazing flavors and lots of nutrients.  It's a healthy low calorie (under 300 calories per serving) breakfast that is a sure winner and a crowd pleaser. 
This sheet pan meal is ideal for a breakfast or brunch and can be easily made into larger batches to feed a family or a crowd.

This sheet pan breakfast can be made from start to finish 30 minutes or less with little mess and little cleanup.

Ingredients:

* 4 eggs
* 3 cups of spinach ( this breakfast recipe works good with spinach, kale or both)
* 3/4 cup of precooked spicy sausage. You can also substitute the sausage with a milder sausage, bacon or ham.
* 1/4 cup of diced onions.
* 1/4 cup of diced sweet peppers.
* 1 sliced medium Roman tomato.
* Salt and pepper to taste.

Cooking instructions.
Preheat oven to 400°.
Slightly Grease or spray your sheet pan with cooking spray even if you are using a non-stick pan. Assemble your breakfast on the sheet pan in layers making little holes or baskets where you want to place your eggs, start with your spinach and or kale layer sprinkle over your vegetables and meats crack open eggs separating them several inches apart. I find it easier to crack one egg at a time in a cup, (just in case the yoke breaks) and pouring them into the prepared hole or baskets. Place in preheated oven and bake for about 20 minutes check consistency of eggs by shaking the sheet pan, a little wiggly your eggs are medium no wiggle your eggs are medium well.
