MAPLE EGGS IN A BASKET

          MAPLE TOAST CUPS 

These tasty little breaded baskets are very convenient to eat out of hand making them perfect for a brunch or early party. Definitely a crowd pleaser!

 With only a few ingredients, this is the perfect quick and easy go to breakfast for a large crowd or for your overnight guest. Also excellent for parties and brunches.
Quick and easy breakfast or brunch with only four ingredients. Also a great early morning got to go kind of breakfast for the whole family. Early morning work or school not a problem these can be made ahead of time and stored in the refrigerator for three to four days. Just pop them in the microwave for 30 to 40 seconds and out the door you go. Kids love them!


Ingredients:
* 1/2 cup of softened butter.
* 1/4 cup of maple syrup.
* 6 large eggs.
* 6 pieces of bread white or wheat.
Cooking instructions:

Preheat oven to 350° f.
Soften butter in microwave, mix in maple syrup and stir well. 
Cut the ends off the bread, and flatten each piece with a rolling pin. 
Mix together the butter and syrup. Soften in microwave for a few seconds if needed.
 Brush bread on both sides with butter and maple syrup mixture. 
Use a non-stick muffin pan and place a piece of bread in each  cup pressing firmly to form a basket. Crack open eggs and put one in each basket. Place in oven and bake for 15 to 20 minutes depending on preference with egg yolk. ( To ensure no broken yolks when placing in basket crack egg open in cup and pour in two basket)
 Before serving reheat any leftover butter and syrup mixture and pour over the top for extra flavor.

Option: you can add cooked bacon bits or cooked crumbled sausage in the bottom of each before adding the egg.
